Bonci Dubai brings Gabriele Bonci’s celebrated Roman pizza al taglio to City Centre Mirdif alongside pasta, Italian mains and desserts.
DUBAI: Bonci Dubai has expanded Rome’s famous pizza al taglio concept into a full Italian dining experience at Chef’s Society in City Centre Mirdif. Led by celebrated Italian pizzaiolo Gabriele Bonci’s approach to dough and ingredients, the Dubai restaurant combines its signature Roman-style pizza with freshly prepared pasta, main courses, breakfast, starters, salads and desserts.
The centrepiece remains pizza al taglio, the Roman tradition of baking pizza in large rectangular trays and selling portions by weight. Guests choosing takeaway or pizza by the slice can select their preferred variety and portion at the counter, where the pizza is cut with scissors, weighed and priced accordingly.
Dine-in guests have another option, with a fixed selection of pizzas available in specific sizes and freshly prepared to order.
A key part of the Bonci Dubai experience is its dough. The restaurant uses a signature flour mix and a 48-hour fermentation process intended to produce a base that is airy inside and crisp outside while developing deeper flavour.
Visitors can also see part of the preparation process at a live pizza station, where the pizzaiolo stretches and works the dough. Large trays of freshly baked pizza al taglio are displayed at the counter, giving diners a clear look at the available combinations before ordering.
Gabriele Bonci, widely associated with Rome’s modern pizza scene, describes the philosophy behind the concept simply: “We are not pizza. We are philosophy.”
Pizza choices in Dubai extend from classic tomato and white bases to combinations featuring ingredients such as aubergine, courgette, onion and potato. Menu highlights include Genovese Ragù and Potato & Parmigiano pizzas.
However, Bonci Dubai is designed to go beyond pizza. Diners can order Truffle Pasta and Mushroom Pasta, while Italian main courses include Chicken Cacciatore and Milanese-style cutlets. Breakfast dishes, starters, salads and desserts complete the wider menu.
The restaurant is located inside Chef’s Society at City Centre Mirdif and is open daily from 9am until midnight. Prices start from AED 50, positioning the concept as an accessible way for Dubai diners to explore Bonci’s distinctive approach to Roman pizza alongside a broader Italian menu.
