DUBAI: Food is a vital part of the annual Diwali festivities, so it follows that India’s culinary traditions abound in celebratory dishes and desserts across the Expo 2020 Dubai site, as the festival of lights is marked in style next week.

A heady mix of aniseed, cardamom, cumin, fenugreek, and saffron can be found in Expo’s diverse array of Indian restaurants, from high-end Indian dining courtesy of Rohit Ghai to Diwali-themed baking classes at Bread Ahead Bakery, and a delightful sweet and savoury menu at Farrago.

Hailed as one of the UK’s most creative and accomplished Indian chefs, Ghai has brought his first solo restaurant, Kutir, from London’s salubrious Chelsea to the world’s latest hotspot. To mark Diwali, Kutir will present a special five-course Signature Expedition set menu, including vegetarian options, from 4-6 November.

Bread Ahead Bakery’s Diwali classes will teach techniques for baking traditional Indian sweet treats served as a centrepiece during festivities, such as bread Ladoo (sweetened bread bundles), nan Khatai (orange, almond, and cardamom biscuits), and gulab jamun (milk-solid-based sweets) soaked in saffron and rose syrup. The two- to three-hour Diwali classes take place on 4 and 5 November from 1800. Bread Ahead will also be selling special pistachio doughnuts throughout Diwali.

Farrago, which has an outlet apiece in the Mobility and Sustainability districts, will ensure diners leave with a sugar rush. Its extensive Diwali menu prides itself on its sweet offerings, including Rasgulla (a sweet, soft, spongy dessert), Kesari Phirni (Kashmiri rice pudding), Rasmalai (Bengali sweet made with Indian cottage cheese), and Boondi Laddu (festive sweets made with gram flour, ghee, sugar, nuts, and cardamom powder). The Diwali menu will be served from 3-6 November, priced from AED 125 per person.

2020 Club by Emaar presents an exclusive Diwali dinner, with five contemporary cuisines to choose from. The restaurant’s farm-to-table concept features scores of organic and local ingredients in line with Expo 2020’s sustainability ethos.

The no-frills, budget-friendly Al Farwania originally started as a tiny teashop in 1981. Today, the family business is a Dubai institution and its presence at Expo 2020 is a welcome addition to the F&B line-up, with big flavours and boldly sweet sweets. Diners can enjoy dhal, parathas, keema, and chili parathas washed down with Al Farwania’s famous chai strong, cardamom-infused tea.

Expo 2020 is celebrating Diwali across a variety of vibrant events, including a showcase of the country’s art, culture, cinema, and cuisine at the India Pavilion; a Diwali edition of music festival Late Nights @ Expo; and a stunning, specially curated 360-degree illumination projection show at Al Wasl Plaza.
